Frost will ruin the texture of the brandy cream, increasing the risk of separation between ingredients. When the ice crystals melt, the cream will become watery too.
Now for leftover or homemade brandy cream, you’ll need a rigid plastic container with a lock or airtight lid to pack the cream for freezing. Just pour the cream directly into the plastic container and then close the lid. Place the container in a resealable plastic bag. This offers added protection against freezer burns. Then, get a marker, write the storage date and stick in the freezer, right side up. Do not place the container on the side or the cream will leak out!

Thawing frozen brandy cream is easy, just take the container out of the freezer and leave it to thaw in the fridge for an hour or two. But if you’re pressed for time, you can leave the cream to thaw on your kitchen counter. Just make sure you’ll use the cream right away. It’s not advisable to let any type of dairy product sit at room temperature for long. If the cream is separating or it has turned watery, go ahead and whip the cream to incorporate the ingredients.
